From the house of Billecart-Salmon, we find the 100% Blanc de Noirs, Clos Saint-Hilaire, both a wine and a vintage that has been hailed as magnificent. Billecart-Salmon is the oldest, continuously family- owned house in Champagne, with a style that looks more to freshness and balanced acidity than anything else. The old-vine Clos St. Hilaire hails from a single hectare of Pinot Noir from this prestigious, walled-in vineyard. The house style is known for its classic and timeless representation of Champagne. The Coeur de Cuvee is a blend of 80% Chardonnay and 20% Pinot Noir, all from estate vineyards, with a vine age of fifty years or older. It is aged ten months in cask, yet without malolactic fermentation. It starts with the soil, in a vineyard where we find ungrafted Chardonnay vines, which is the only one of its kind. This is the result of an extremely high content of sand, which allows the vines to thrive without the fear of phylloxera. Yet, it was also the experience, passion and respect of terroir shown by Jean-Mary Tarlant which brought these wines to life.
