Today, Laurent Vilmart runs the 27- acre operation. Known for his precise attention to detail, Laurent's motto is "I do wine first, Champagne afterwards." He insists on strictly selecting the healthiest grapes, barrel fermenting his wines, and aging them in new and neutral wood before blending. The Coeur de Cuvée ("coeur" means "heart") is so named because Laurent selects only the middle pressing of the juice for this blend. The wine (80/20 Chardonnay/Pinot Noir) comes from the oldest vines at Vilmart (55 years old). AG 93 (1802041) builT fROM The "base" C hartogne-Taillet Champagne is produced exclusively from grapes grown in the family's 28 acres of vineyards northwest of Reims. Before taking over the vineyard and cellar management from his father Philippe in 2006, Alexandre Chartogne spent time learning under Anselme Selosse, one of the pioneers in the single-grower movement. A bottle of Chartogne-Taillet displays the complexity which comes from creating great "base wines" as essential building blocks of a truly individual Champagne. The grapes of over two dozen parcels are vinified separately, and then blended to create each distinct cuvée. Their prestige Cuvée Ste. Anne is not only a great Champagne, but also a remarkable value. ✦ Chartogne-Taillet Cuvee Sainte Anne Brut Champagne NV $45 per bottle " …A sensational value. A haunting nose... Polished...Luscious..." WA 92 (1802033) building On TRadiTiOn r odolphe Peters farms 45 acres scattered between 63 parcels, all of them rated "Grand Cru", from vines which are nearly a century old. Unlike many producers, Rodolphe allows his wines to go through malolactic fermentation, the secondary process that lowers acidity. He feels that this allows the natural minerality, typical of the Cotes des Blanc, to shine through. The base of the Cuvée de Réserve Blanc de Blancs is 2010, yet contains another 19 vintages, bringing added depth and subtlety. ✦ Pierre Peters Cuvée de Reserve Blanc de Blancs Grand Cru Brut NV $54 per bottle "...Striking...shows fabulous cut and definition in its fruit, expressive aromatics all backed up by plenty of underlying structure.
