Now under the management of the next generation, very little has changed here, and with Eric Rousseau in the cellar, the future is very bright. All vineyard work is done by hand under organic practices, along with severe pruning and de- budding to obtain the lowest possible yields. After a lengthy maceration with 10% stem inclusion, the wines are moved to French oak. Chambertin, Clos de Beze and Clos Saint-Jacques all see 70% new oak, which they handle with ease. These are some of the greatest wines coming out of Burgundy today. As many critics and producers have stated, 2011 was truly a wine maker's vintage in Burgundy. The Domaine Rousseau was up to the challenge and handled it with ease at their Grand Cru holdings in Chambertin and Chambertin Clos de Beze; the results have been hailed by Allen Meadows as "great wines of the 2011 vintage…."
