The Boiron family is one of the oldest in Chateauneuf- du-pape with ties to the estate since 1860. Yet it was only in 1966 that the name was changed to Bosquet des Papes. With 27 hectares of vines split up between 40 different plots around the region, Nicolas Boiron chooses to ferment and age each lot separated by terroir. This is not to produce the luxury cuvees which the region has become known for. Instead, Nicolas prefers to give each lot the attention it requires to achieve its ideal expression and ultimately allowing him to blend for optimal results. In most cases, the grapes are fermented with the stems, adding depth and structure unheard of in this region. The results are powerful, thought-provoking, traditionally-styled wines which are enjoyable young yet can stand the test of time in the cellar. The "Tradition," their first wine, takes priority in the blending process to assure the best quality in each vintage. The A la Gloire de Mon Grand-Pere, primarily Grenache, is made from 70-100-year-old vines, and 50% of the grapes are fermented with the stems. The results are a lush and creamy Chateauneuf with palate-staining fruit and nuance. The Chante le Merle Vieilles Vignes is the driving force of the portfolio, consisting of a blend of 80% Grenache, 10% Syrah, and 10% Mourvedre, all fermented with whole clusters. After 4-5 weeks of fermentation and maceration, the wine is left to age for 12-24 months in large 600 liter neutral oak barrels.
