The best Chablis is capable of beautifully layered, nuanced bouquets with a depth and richness on the palate, which seduces the senses. Chablis is a wine of terroir, and as you put your nose to the glass, you can almost imagine the Jurassic seabed which formed these soils. Their intense minerality and brisk acidity on the palate only helps to contrast its silky textures, while also lending the ability to pair with nearly any cuisine. Great Chablis can be a wine of pure indulgence, or intense study, yet it can require a decade to begin to show its true colors. The 2004 François Raveneau Montée de Tonnerre is a Premier cru Chablis which is as highly regarded as its Grand Cru brethren. This should come as no surprise, as its location is separated by only a ravine from the Grand Cru Les Blanchots, along the same south-facing slope. In the right hands, such as those of the Raveneau brothers, these wines can be transcendental, and at the price of a Premier Cru. After ten years of development, the Montée de Tonnerre has just entered its early drinking window with a bouquet which forces you to stop and take notice.
