It took little convincing as his new portfolio began to hit the market. The wines of Sottimano had changed, and it was a noticeable, positive change, brought on by a rethinking of the modern techniques that had been employed in their vineyards and winery. The wines were cleaner, refined, elegant, yet finely structured and still able to communicate the intricate traits of each vineyard. m uch of this resulted from a reduction of new wood in the winery, along with cold, long macerations and aging on the lees. e ach of their single-vineyard wines have become overperformers in the region, yet it is the Barbaresco Pajore, which has come to be known as the epitome of the house style. Pajore is pure class and elegance, with the balance to please upon release, but also age effortlessly in the cellar. One such winemaker is undoubtedly a ndrea Sottimano.
