Within its confines is a small number of producers who have been breathing new life into the region, yet none other can claim both the size and focus on terroir that the Domaine Arnaud l ambert can. With a combined 50 hectares of vineyards to work, the Domaine currently produces seventeen individual still-wine bottlings. e ach one hails from a distinct terroir. Eric Guido (1470270) P ROV e NC e Be YON d R OS É T he historic estate of Chateau Simone has been in the hands of the Rougier family for over two centuries, and over that time, they have created a virtual monopoly in the appellation of Palette. They believe in the land's ability to create wines of importance, Red, Blanc and Rosé that can rival the best of France. In many cases, these are culled from vines that are over 100 years old, all of which are tended to by hand. The Palette Blanc is made from a blend of Clairette with small amounts of Grenache Blanc, Bourboulenc, u gni Blanc and a touch of m uscat Blanc. The grapes are crushed and fermented with native yeast before being placed for one year in 20–30 hectoliter casks, then for another year in older barrels. In its youth, you'll find soft textures and lush fruit contrasted by brisk acidity, yet this is a white that matures more like a red in your cellar, as time adds sensual depths of texture, minerals and richness.
