Strict attention is paid to their mix of esteemed vineyards, with holdings in l a Crau and Pignan. m any of their vines are over 100 years old, and each parcel is tended to through natural practices. In the cellar, you'll find large wood foudres where the Cuvee Reservee is fermented with stems intact, before being further refined for up to 18 months. This blend of 85% Grenache, along with Syrah, m ourvédre and a mix of Rhone varieties is a model expression of Châteauneuf du Pape. The fact is that the wine produced by Pegau is quite unique and difficult to quantify. Jeb Dunnuck (1413133) aS O L d-S CHOOL a S T H e Y C OM e C los du m ont o livet has been a family-run operation since 1932, when Seraphin Sabon began farming grapes to sell to top negociants. o ver three generations, their holdings grew in choice locations, and they began bottling their own Châteauneuf du Pape. Today, the winery is run by four siblings, the descendants of Seraphin, with Thierry Sabon leading the charge. The style is one of restrained elegance, rooted in tradition and able to take advantage of the family's many parcels throughout the region. The Cuvee Papet stands at the pinnacle of the family's portfolio; it's a homage to their Grandfather "Papet", and is only produced in the best vintages. Here we find a traditional blend of Grenache, Syrah and m ourvèdre sourced from their oldest vines. At the core of Papet is fruit from 100 year old vines in the revered l a Crau vineyard.
