From this vineyard, Hirsch farms 61 individual parcels, each one treated differently than the other, from farming to vinification, to further accentuate the unique terroir of each block and deliver pure, site-specific Pinot Noir. o nce the selection of fruit is completed, the berries ferment 10% whole cluster which adds even further textural depth, before aging in French oak, of which only 27% is new. What emerges is a Pinot Noir of impeccable balance, purity and structure. In fact, the most amazing thing about the San Andreas is how incredibly beautiful it already is. No one really believed that a group of high-powered investors could create a cult label that would fetch prices north of $100 a bottle in Santa Barbara, yet Jonata proved them all wrong. m uch of this had to do with its winemaker, m att Dees, a graduate of the u niversity of v ermont, who came on-board with a degree in soil science and ended up creating what are today some of California's most highly sought after and acclaimed wines. l ucky for us, that this same group of investors were happy to let m att experiment and create a wine that would receive the same personal attention in the vineyards and winery as Jonata, but at a much more affordable price. That's how The Hilt came into being. In the Santa Rita Hills, m att sought to create Pinot Noir that would communicate the intricacies of terroir.
