It's on the famed m ontosoli hill that they tend their Sangiovese vines through the most natural approach possible, employing both organic and biodynamic practices to assure that each harvest captures the signature of the vineyard and the vintage. This passion-driven approach continues in the winery, where respect for tradition is coupled with a hands-off mentality. The grapes are allowed to ferment spontaneously before being moved by gravity into large oak botti for a long slumber in concert with the phases of the moon. What emerges from this cellar is one of the most pleasingly- rustic Brunellos that you could ever imagine. The philosophy was, and remains, deeply rooted in the earth, focusing on the land and vines first. The meticulous selection in the vineyards of v aldicava remains one of the most severe in Italy, or possibly even the world. It is this same selection that informs the structured, intense Brunello that v aldicava has become famous for. What's misunderstood about v aldicava is that its elegant textures and dark color are often thought to be the result of an international style or small oak, but that is not the case. The vinification at v aldicava has always remained traditional, allowing the true identity of the estate's terroir and esteem of their Sangiovese fruit to shine through.
